Lemongrass, Coconut + Mango Lassi

As we charge through life working hard, moving house, coupling up, socialising with friends, raising little bubs, weeding the front garden, paying bills, and doing all the other little things that make up our extraordinary-ordinary everyday lives, it’s very easy to discount the importance of the foods we choose to nourish our bodies. I consider food and the joy that comes with eating and sharing food essential to a natural and healthy mind and body.

This lassi is full to the brim with ingredients that can give your immune system and body a super health boost. It also happens to be quite delicious.



1 cup organic coconut milk

1 stem lemongrass, hard outer layers removed

2 cups Greek yoghurt

1 mango, peeled and flesh cut away from pit

2 tsp honey

2 tsp turmeric powder, or freshly grated turmeric root

5 ice cubes

Saffron threads, optional

Extra coconut milk, optional

1. Lightly bash the lemongrass stem with the handle of your knife, or another blunt kitchen object, add this to a saucepan along with coconut milk. Bring coconut milk to the boil and then turn off the heat. Set aside for 20-30 minutes for the milk to cool and the lemongrass to infuse its flavour.

2. Add cooled lemongrass-infused milk and all ingredients to a blender and whiz until smooth. Add more yoghurt if you prefer. Taste and adjust to your liking.

3. Serve in glasses topped with a pinch of saffron threads, a drizzle of coconut milk and a spoon.
