Take a big breath in, hold it, relax, and breathe out. You’ve made it halfway through the working week. Well done you. To give you that extra little energy you need to get you through the last few days before Friday wind-down drinks and that long lazy weekend you’ve been wishing for since 9am Monday, here’s a brekkie recipe that will have you bouncing out the door with a grin from ear to ear.
2 tbsp honey
20ml espresso-strength coffee
1 tbsp sunflower oil
1 cup rolled oats
½ cup walnuts, roughly chopped
½ cup shredded coconut, unsweetened
3 tbsp sesame seeds
½ tsp cinnamon
¼ cup dried figs, roughly chopped
2 cups Greek yoghurt
2 blood oranges*, sliced
½ avocado, sliced
Honey, for drizzling
*Regular oranges are just as lovely if you can’t get your hands on blood oranges
Preheat oven to 160C.
In a bowl, combine the honey, oil, and coffee. Mix well to combine.
In a separate bowl combine the oats, walnuts, coconut, sesame seeds, cinnamon, and a pinch salt. Pour over the honey and coffee mixture. Mix well.
Spread evenly over a baking tray that has been lined with baking paper and pop into the oven to bake for 10 minutes. Stir and bake for a further 5-10 minutes, until golden and crisp. Allow to cool and stir through chopped figs.
To serve divide the yoghurt between four serving bowls. Top with some orange and avocado and then scatter over the crunchy coffee granola. Finish with a final drizzle of honey.
