As somebody who needs breakfast in order to have any chance of functioning properly throughout the day, I always make sure I give myself time to sit down and enjoy whatever it is I’m eating. What exactly I eat for breakfast all depends on how I feel, the weather, and what fruit and vegetables are in season.
As the days get warmer nothing beats my super-healthy yoghurt bowl made from thick Greek yoghurt, sweet strawberries, pomegranate, fresh mint, toasted buckwheat, and a scattering of pistachio nuts.
When trying this out for yourself, feel free to mix up the variety of nut – try almonds, walnuts, or brazil nuts – and use whatever fruits are in season. A favourite variation of mine is chopped mango, macadamia nuts, mint, and flaked organic coconut.
This breakfast is a bowl of superfood goodness and long lasting energy that will keep you happy and full all morning.
1½ cup thick, plain yoghurt
1 cup fresh strawberries, chopped into small dice
Handful of fresh mint leaves, finely sliced
¼ cup toasted buckwheat kernels
¼ cup pistachio nuts, roughly chopped
½ cup pomegranate seeds
1 tbsp lemon juice
Good quality runny honey or organic maple syrup
In a small bowl combine the chopped strawberries, mint, buckwheat, pistachio nuts, pomegranate seeds, and lemon juice. Toss gently.
Divide the yoghurt into two serving bowls. Top with the berry and pomegranate salad. Finish with a drizzle of honey or maple syrup. Serve immediately.
