These little baked scrolls offer everything you could ever want or need in a treat. A soft, pillowy cinnamon and cardamom-spiked, yeast dough spirals around a classic combination of spiced apples and cinnamon sugar. What’s not to love?
For the dough:
100g plain wholemeal flour
100g plain all-purpose flour
7g dried yeast
2 tbsp rice malt syrup – honey can be substituted
120ml luke-warm water
¼ tsp cinnamon
¼ tsp ground cardamom
¼ tsp sea salt
For the filling:
50g unsalted butter – organic if possible
2 tbsp cinnamon, plus extra for sprinkling
3 tbsp honey
50g demerara sugar
2 small apples, chopped
3 pitted dates, roughly chopped
¼ tsp vanilla essence
½ cup water
Preheat oven to 180C
In a food processor, combine the flours, yeast, syrup – or honey – cinnamon, cardamom, and salt. Gradually add the water while pulsing the mixture. Pulse until the mixture forms a soft, elastic dough.
Light dust a work surface with flour and knead the dough for a few minutes. Lightly oil a bowl and pop the dough in. Cover with plastic wrap or a kitchen towel and leave for approx. 40 minutes to an hour until doubled in size.
For the filling, place the chopped apples and dates in a saucepan along with the vanilla essence and ½ cup of water. Simmer until the apples are soft. With a fork, roughly mash the apples.
Combine the butter and cinnamon in a bowl. Set aside.
On a floured work surface, roll your dough into a large rectangle about 1cm thick, dusting with flour as you need. Dot the cinnamon-butter mixture around the dough and then follow with the cooled apple and date mixture, spreading it out as evenly as you can. Drizzle the honey all over the mixture.
Gently lift up the longest edge of the dough and roll it over to form a log. Slice into rounds about 3 cm thick. Lightly grease a baking tray with some oil and sprinkle a generous amount of demerara sugar all over the bottom.
Pop the rounds of dough cut side up, cover with a kitchen towel and leave to prove in a warm place for another hour or so, until the scrolls have doubled in size.
