Inspired by a friend in the midst of a medical degree and an empty pantry, this recipe can be easily and quickly thrown together by those without the time or budget to cook up gourmet meals night after night. Of course, don’t think for one super-food second that this salad lacks edge. The combination of energy-rich lentils, spices, seeds and vincotto produce a tasty, nutritional-powerhouse of a dish – one that will prevent a blood-sugar meltdown during study and exams, and see you through until the next visit home and parental-pantry raid. 2 cups lentils, cooked
½ Spanish onion, diced
1 tbsp garam masala
Juice and rind of 1 lemon
¼ teaspoon five-spice
½ teaspoon dried chilli flakes (optional)
1 cup fresh mint leaves
½ cup roasted red peppers (god quality, store-bought)
Freshly ground black pepper
2 tbsp seed mix (I used chia, pumpkin, sesame, sunflower, and flax)
½ cup goji berries (If dried, rehydrate in warm water for 5 or so minutes)
1 cup spinach leaves
Vincotto (or balsamic vinegar)
Drain and rinse the lentils. In a bowl combine the lentils, spinach, onion, red pepper, spices, splash of olive oil, lemon juice and zest, fresh mint and a drizzle of vincotto. Season to taste and sprinkle goji berries and seeds on top.
