Summertime at No. 9 Brownslea

These simple vanilla cupcakes are a comforting culinary trip down memory lane. A tried and tested recipe made with love over many years and the simplest of ingredients and methods.

While they might not call for the kinds of alternative ingredients used in previous recipes they are quite simply…perfection.

1 cup caster sugar

1 cup self-raising flour

½ cup butter

1 tsp baking powder

2 eggs

Vanilla extract (or vanilla beans)

Icing sugar (powered sugar)

Water

Lemon juice

Preheat oven to 190C

Prepare cupcake tin with cupcake cases. Sieve together the flour and baking power and mix together with caster sugar until well combined. Add the eggs, butter and vanilla and mix until batter is combined and reaches a smooth dropping consistency. Spoon into prepared cases and bake for approx. 20 minutes or until risen and slightly golden on top.

Simple White Icing

Gradually stir together the icing sugar, water and a squeeze of lemon juice until it reaches a thick but workable consistency. Spread onto cakes once cooled. Garnish with garden flowers.

Makes 20 standard size cupcakes
