My Green Pear and Coconut Bircher Muesli is a light, healthy and wholesome breakfast bowl brimming with all kinds of good things. Organic rolled oats, grated green pear, and a gorgeous medley of nuts and seeds soften up gently overnight in young coconut water. Served in the morning with a big spoonful of thick natural yoghurt, smashed summer berries and a squeeze of honey. A near perfect way to begin the day.
2 cups rolled oats
1 green pear, grated about 1 cup
½ cup young coconut water – optional
¼ cup shredded coconut – unsweetened
2 tbsp poppy seeds
2 tbsp sesame seeds
¼ cup currents
¼ cup raw almonds, roughly chopped
¼ cup raw walnuts, roughly chopped
¼ cup raw pistachios, roughly chopped
1/2 cup natural yoghurt
½ cup strawberries
½ cup blueberries
Honey, to serve
In a large mixing bowl, combine the oats, grated pear, shredded coconut, poppy seeds, sesame seeds, currents, and nuts. Add the coconut water and add as much plain water you need to just cover the oats. Cover and leave to soak for at least 2 hours or overnight in the fridge.
For the berries, place them in a bowl and crush with the back of a fork.
When ready to serve, stir in the yoghurt into the soaked oats along with a squeeze of lemon. Divide into bowls and top with some extra yoghurt, a sprinkling of nuts, the smashed berries and a drizzle of pure honey.
